Slow cooked lovin’ // Vegan slow cooking

I love anything slow cooked. Partly because it is so easy and partly because it tastes so good. With a vegan in the house, i’ve been trying to think of recipes that I could cook. I love the idea of ‘shove it in the slow cooker and go.’ 

Here is a Mexican been mix sort of thing. I loved it. You might too! 

You’ll need:                                                             

  • 1 can Chickpeas                                                          
  • 1 onion finely chopped                                                 
  • 1 clove crushed garlic                                                  
  • 1 can diced tomatoes 
  • 1 zucchini roughly chopped
  • 1 can red kidney beans 
  • 1/2 corn (off the cob) 
  • 1 bay leaf 
  • 1 cup vegan vegetable stock 
  • 1 teaspoon yogurt (Optional/not vegan)

Method:

1: Drain all canned ingredients and place all ingredients in slow cooker.

2: Cook on low for 3 hours
