This is one of my Mums specialities. It’s such an easy, filling vegan soup. Enjoy x
- 1 onion – finely chopped
- 2 cloves crushed garlic
- 2 tbs oil
- 2 carrots – diced
- 1 small sweet potato – diced
- 1/2 cauliflower – cut
- 2 tins crushed tomatos
- 1L vegetable stock
- 1 tbs basil
- 1 zucchini – diced
- 300g green beans – chopped
- 2 tins red kidney beans – drained
1: Finely dice onion, crush garlic and saute in oil.
2: Add carrots, sweet potato, cauliflower and sauté for 4 minutes.
3: Add crushed tomato, vegetable stock and basil. Cook until vegetables are tender.
4: Add Zucchini & green beans and cook for a further 2 minutes.
5: Add two tins red kidney beans and season to taste.
