Raw Vanilla Coconut Fig Slice

This is such an easy vegan slice and when made in season, it’s cheap to make! 

You’ll need: 

Walnut fig base 

  • 1/4 cup almonds 
  • 1/2 cup walnuts 
  • 3 tbsp desiccated coconut 
  • 2 tbsp chia seeds 
  • 1/2 cup dried figs or 1 fresh fig 
  • 1/2 cup dates 
  • 1/2 tbsp cinnamon 

Vanilla coconut cashew cream 

  • 1/2 cup cashews 
  • 1/2 cup coconut milk or cream 
  • 1/2 cup desiccated coconut 
  • 1 tsp vanilla paste 
  • 2 tsp maple syrup 

Directions: 

1: In a food processor, blend all the dry ingredients. Slowly add dates and fig. Place in cake tin and place in freezer. 

2: Blend cashews in food processor. Add coconut, vanilla paste and maple syrup and combine. Slowly add coconut milk or cream. 

3: Remove base from fridge and place the cashew cream on top. 

4: Place in freezer to 4-6 hours or until set.
