Stuffed tomatoes // Dinner on a student budget

I’ve been slowly working my way through recipe books at home. I have one that I took from my Aunt’s place when she died. One side is in Greek and the opposite is in English. She loved Greek food, (like any good Greek should!) but rarely cooked it. YiaYia used to cook stuffed tomatoes for Dad and you can see the joy in his eyes when we cook them. I thought I’d do a practice round. They turned out rather well. So here is the recipe. 

You’ll need: 

  • 1 clove garlic (crushed)
  • 1 onion (finely chopped) 
  • 4 large tomatoes 
  • 4 heaped tablespoons rice 
  • 1 large handful of mince 
  • 1/2 handful parsley
  • 1/2 handfull pine nuts (crushed)
  • 1 sprig oregano  
  • Olive oil 
  • 1/2 cup water 

Method: 

1: Preheat oven to 180 degrees (Fan forced) 

2: In a saucepan place the rice and water. Put on stove and stir occasionally, until cooked. 

3: Meanwhile, in a pan, place the mince, some olive oil, pine nuts, oregano, parsley, crushed garlic and finely chopped onion. Cook, tossing occasionally, until mince is browned. 

4: Chop off the top of each tomato and scoop out the inside. 

5: Place the rice and meat mixture into a bowl and mix together.

6: Roll into balls, (like meatballs) small enough to fit inside each tomato. Stuff the meat & rice mixture into each tomato and place on baking tray. 

7: Bake for 45 minutes
